I just tried these. I was surprised at the simplicity and the appearance of normal pancakes!! They tasted great too!! I subbed the tapioca starch for arrowroot starch and used 1 tbs. coconut sugar. This is my go-to pancake recipe!!! Kodiak cakes has nothing on these!!! So yummy and filling!

Really tasty pancakes we all loved the grainy texture that you get from the almond flour. Certainly makes a more substantial pancake. But still very light and easy to eat. I did add an extra tablespoon of maple to the mix just to sweeten them up a bit more. But overall they were a big hit for my first attempt at homemade pancakes. Will definitely be making another batch soon.

I’m not complaining about the yield of this recipe – in fact, I’m very happy. I normally get around 14 pancakes with traditional flour. Today, using the almond flour my yield was 10. Had a slight grainy texture, which is different. Traditional flour pancakes don’t typically fill me up but I was struggling to finish the second round of two that were on my plate! Wish I could post pictures…
