These are now my ‘go to’ banana muffin recipe. Bob’s GF flour is fantastic and I love the suggestion to let the batter ‘sit’ for 30 mins. Having exact measurements for ingredients – even egg – ensures that these muffins will be true to the recipe. I oven bake walnuts, then chop and add to mixture prior to placing in muffin pans. Best Banana Muffins ever!

My cookies spread quite a bit. I used Organic Anita’s Mill gluten-free flour, perhaps that was it. The taste is really good, however, I like my cookies to be chunkier and compact. I will put more oats next time and walnuts, perhaps this will keep the cookies together.

I used the recipe from the book Easy Gluten-Free Baking and absolutely loved it! My family loved it. I didn’t have baking soda at home and only baking powder, so I used that instead where it called for baking soda. May I ask why you recommend using both? Thank you very much, Elizabeth!

Great recipe! I used a slightly different flour blend and added more vanilla because my son is allergic to almonds. They came out so fluffy and with such a great texture! Very yummy too! Definitely a great gluten free lofthouse cookie recipe!
